Vegetable Terrine
It’s time of the year when we start getting a bit sweaty. When it’s hot outside, how about making a home-made vegetable terrine? A refreshing terrine with lots of vegetables will help you feel cooler. It’s wobbly and cute.
■ Recipe for Vegetable Terrine
【Ingredients】
・Carrot*
・Paprika*
・Spinach*
・Okura*
・4.5g consommé for children
・Salt to taste
・4g powdered agar
・450cc water
Note: * Depending on baby’s preferences, use proper amount.
【Directions】
(1) Cut vegetables the way you like.
(2) Boil the Step1 vegetables with salt (not included in the ingredients).
(3) Put water in a pan and add powdered agar and consommé for children. Bring to the boil and dissolve completely. Add salt to taste and let it cool.
(4) Line the Step 2 vegetables in a mould and pour the Step 3 mixture slowly. Chill in the fridge until congeals.
【Useful Tips】
The use of consommé for children is recommended. You can also replace it with consommé with no additives and low sodium. If the flavor is too light for adults, you can serve it with hollandaise sauce** on the side.
**Quick recipe for hollandaise sauce: whisk 1 egg yolk, 1tbsp lemon juice, 35g butter, and a bit of salt and pepper over a bowl of hot water.
